Several of you had questions about the cookies the kids and I made for the Fourth of July. As I said, I’m not crafty by any means, but these were super easy and turned out really well!
I sort of borrowed and stole from several recipes on Pinterest to put this together.
Sugar Cookies
1/2 C Butter (softened or microwaved if you’re like me and forget to set it out)
1/2 C sugar
1 Egg
2 tsp Vanilla
1 tsp Baking Powder
1.5 C flour
Heat oven to 350. Cream together butter and sugar. Add in egg an vanilla and mix until combined. Add flour and baking powder to the bowl.
Place dough (should feel about like play doh) on a powdered surface and roll out. I liked mine about 1/2″ thick. Cut into circles–we just used a glass as our cookie cutter.
Spray cooking sheet with non-stick spray. Place cookies on sheet about 2″ apart. Bake for 10-15 minutes (depending on thickness). You want to pull them out just before the edges start to brown.
Put in fridge to cool.
Frosting
8 oz cream cheese, softened
5 T Butter (again, softened or microwaved)
1 tsp Vanilla
2C Powdered Sugar
Lemon juice (I put in about 5 drops, but next time, I’ll probably do more just to cut some of the sugar with the acidity)
Mix cream cheese and butter. Add vanilla. Slowly add powdered sugar and blend until mixed. Add lemon juice.
Once cookies have cooled, spread frosting over the top with spatula. Top with your favorite fruit. Refrigerate until ready to eat.
